Dishing up Mexican flavours

FAMILY is the key to success at the Tequilas On Main Restaurant in Rouse Hill.

Owner and chef Ricardo Vila and his family run the restaurant which serves a large range of Mexican dishes as well as a variety of other meals including American-style ribs, steaks and Scotch fillets.

Mr Vila's wife Tracey handles accountancy, his son Bobby is the bar manager and his daughter Jessica is the restaurant manager.

After 30 years in the food business, Mr Vila says he still really enjoys the industry.

"I meet a lot of people and the food business is really fun. I've been involved with it all my life," he said.

Tequilas On Main's signature dish is the fajitas.

"It's strips of meat chargrilled with guacamole, onions, lettuce, tomato and you can roll your own," Mr Vila said. "The American spare ribs are also popular. These are slow-cooked in our own barbecue sauce. The creme caramel is home-made and is our best-selling dessert."

Mr Vila says a lot of people think that Mexican restaurants have a limited menu but at Tequilas On Main if you add all the options up there are about 100 dishes.

"Our venue has a large bar area so people can enjoy a drink and meet up before their dinner," he said. "We also attract young couples who can have a nice romantic dinner in a booth, or there's a place for rowdy parties in the back, or people can sit quietly by the window. Our decor is modern but Mexican and it features a large Jim Beam bottle collection. We also have a nice open kitchen where you can watch the cook prepare your meal."

The bar offers a large selection of Mexican beers, imported beers and a wide variety of cocktails.

"Our special drink would be our sangrias, a traditional Spanish drink made of red wine and mixed with fruit. It's something like a punch," Mr Vila said.
