Head chef and owner Carlos De Jesus said he wanted diners to enjoy the relaxed atmosphere at the Rouse Hill restaurant, where, he promised his customers, they would feel right at home.

Mr De Jesus said he had dedicated his life to re-creating Mediterranean cuisine and his desire was to bring his knowledge of different foods to his customers.

The menu at Villa Moura includes steaks, pasta, seafood and 22 different skewers to choose from.

All skewers include a choice of two side dishes which vary from fried cubes of polenta, pumpkin and spinach risotto to steamed vegetables, a garden salad or chips.

He said the sauce didn't contain any preservatives or colouring and was made with natural ingredients.

``Just two drops on your plate keeps the doctor away,'' Mr De Jesus said.

Staff at Villa Moura pride themselves on excellent service and affordable meals.
